Healthy Monkey Bread

I cant do white flour anymore, we cut it 10 years ago.
Here is my “monkey bread” healthy style! It tastes just good!

  • for the dough
  • 1/4 cup warm water 110°
  • 1 1/2 cups of warm milk
  • 2 eggs
  • 1/4 cup of grass fed butter, melted
  • 1/4 cup maple syrup
  • 1/4 cup coconut sugar
  • ½ tsp sea salt
  • 2 ½ tsp yeast
  • Dash of cinnamon
  • 3 ½ – 4 ½ cups fresh ground spelt or kamut flour

  • for the coating
  • 1/4 cup warm milk
  • 3 tbs butter, melted
  • ¾ cup coconut sugar
  • 1/4 cup maple syrup
  • 4 tsp ground cinnamon

  1. Melt butter, milk, sugar, and salt in a pan. Meanwhile put yeast and warm water in mixer let sit 5 min..
  2. Add in warm milk mix.
  3. Mix in 3 cups of flour. If the dough is still wet, continue adding in flour to mixer.
  4. Knead in mixer for 5 minutes or until the dough begins to form. Cover and rise 45 min or until doubled.
  5. Punch down and add a bit of flour to form small 2 inch balls.
  6. Coat a pan with butter. Then whisk together the milk and butter in a small bowl. Stir together the coconut sugar and cinnamon in a separate small bowl for topping.
  7. Working with one small piece of dough at a time, dip it into the bowl with warm milk and butter with one hand. Let the excess drip off; then roll it around in the bowl of cinnamon and coconut sugar with your other hand. Place in pan. Repeat with the remaining small pieces of dough, layering them evenly into the pan
  8. Cover to rise and place it in a warm place for 30 minutes, or until it has doubled in size.
  9. Preheat the oven to 350°F. Bake for 22-25 minutes or until the sides of the dough pieces on top feel firm to the touch. I usually melt extra butter and maple syrup for extra topping or peanut butter and smashed banana melted.
  10. Enjoy!!!
