 FINALLY-I perfected 100% fresh ground spelt grain artisan bread- only took a few years😆 This bread was SOOO delicious! I grind fresh spelt or Emmer grain for the flour and used my Electrolux bread bowl and mixer for the beginning. 2 tbs fine sea salt 2 tsp yeast 3 tbs raw honey 2 cups of room temp water 4-5 cups flour In the mixer, stir together the flour, salt and yeast. In a cup mix together the water and honey until combined. My mixer has a dough hook and I knead it in the mixer for approximately 4 to 5 minutes until everything comes together and is a slightly sticky dough after adding the water and honey. Use more flour as needed...... Cover the bowl with plastic wrap and let it sit in a warm room for 6 hours or so. When the first rise is done, put two cast iron pots or pans in the oven at 500 degrees F. 10 minutes-
