FINALLY-I perfected 100% fresh ground spelt grain artisan bread- only took a few years😆
These got a tad too dark but were SOOO delicious!
I grind fresh spelt grain for the flour and used my Electrolux bread bowl and mixer for the beginning.
2 tbs fine sea salt
2 tsp yeast
3 tbs raw honey
2 cups of room temp water
4-5 cups spelt flour
In the mixer, stir together the flour, salt and yeast.
In a cup mix together the water and honey until combined.
My mixer has a dough hook and I knead it in the mixer for approximately 4 to 5 minutes until everything comes together and is a slightly sticky dough after adding the water and honey.
Use more flour as needed......
Cover the bowl with plastic wrap and let it sit in a warm room for 6 hours or so.
When the first rise is done, put two cast iron pots or pans in the oven at 500 degrees F.
