12/18/2023 0 Comments Healthy Grain ChallahINGREDIENTS • 1 3/4 cup warm water • 4 teaspoons yeast • 6 egg yolks, at room temperature • 1/4 cup olive oil • 3 tablespoons coconut sugar • 1/4 cup raw honey • 5 1/2-6 cups fresh ground flour ( I used organic red hard wheat) 2 teaspoons fine sea salt • 1 egg combined with 1 teaspoon water (egg wash) • Pour warm water into a glass bowl or cup and sprinkle yeast on top and a sprinkle of sugar to activate. Stir yeast. Let it sit for 5-10 minutes to get foamy. Add to your mixer or bowl of choice. • Add the yolks, oil, honey, sugar and lastly the fresh ground flour. Let the mixer knead for a few minutes. I take my bowl off the mixer and cover with my linen bowl covers and allow to rest for 30 minutes in a warm place. • Put it back on mixer and slowly add the salt. Knead for an additional 1-2 minutes until the salt is fully absorbed. Cover and allow to rest 15 minutes. • Make four folds: Pick dough up and fold over itself. Cover and allow to rest 15 minutes. • Do another set of four folds. Cover and allow to rest for 1 to 1½ hours, until the dough has doubled in size. • Preheat oven to 350° F. • Fold the dough over itself to gently deflate. Divide into 6 equal portions. Shape each portion into a ball. • One ball at a time, roll the dough out to a rope approximately 8-10 inches long. Repeat with remaining balls. Braid challah as desired. I did one long one and one round where I attached the two braided ends. Lay on cookie sheet or stone. • Cover with linen towel and let rise 1 to 1½ hours, until the challah is puffy. • Apply egg wash.
