It's the Simple Things

Healthy rich brownies

Dry ingredients
  1. 3 cups spelt or kamut flour
  2. 3/4 cup cocoa powder
  3. 1/2 tsp baking powder
  4. 1/2 tsp baking soda
  5. 1/2 cup molasses
  6. 1 1/4 cups coconut sugar
  7. 1 tsp sea salt
  8. 1/2 cup dark chocolate chips

Wet ingredients
  1. 1 cup oil of choice
  2. 1 1/4 cup milk
  3. 4 tbs chia seeds mixed with 3/4 cup water
  4. 1 tbs vanilla or almond extract

Instructions
  1. Preheat your oven to 350*F
  2. In a small bowl, mix the chia seeds with 6 tbsp of water. Set to one side while you prepare the rest of the ingredients. A thick gel like mixture will form and this will act as a binder, binding all the ingredients together and provide moisture.
  3. Mix dry ingredients.
  4. In a separate bowl, mix together the milk, oil, vanilla and the chia seed mix.
  5. Mix wet and dry ingredients together.
  6. Fold in the chocolate chips
  7. Bake for 20 minutes.
  8. Leave to cool completely before cutting!
