 This is a double batch- freeze half the dough-
4 1/2 tsp active dry yeast 3 cups warm water 4 teaspoons of coconut sugar 6 cups Emmer grain or ancient grain ground fresh- as more if necessary 3 teaspoon sea salt 3 tablespoon butter (melted) ½ tablespoon olive oil (to grease the bowl) • In your measuring cup of lukewarm 1 ¼ cup water, add the 1 packet active dry yeast and 1 teaspoon sugar. Allow the yeast to activate or 'bloom' for about 5 minutes, or until foamy. • In your mixer add yeast and water to activate yeast for a few minutes, then add melted butter. • I used the dough hook attachment in my assistant mixer on low speed for 5 minutes until the dough forms. Not too wet or it won’t form. Add more flour if needed, or a few drops of water to get a nice elastic dough ball. Knead with your dough hook for another 4-5 minutes. • Remove 1/2 the dough and add to an oiled bowl and cover with a linen towel for an hour. Freeze the other half. • Punch the risen dough down about, then remove from the bowl and transfer to your floured wood surface. Knead the bread for 2 minutes, then divide into 12 equal portions. •Roll each into a ball • Cover your shaped buns with and allow them to rise for 15 minutes. Meanwhile heat a large pot and bring to boil: 9 cups of water 1/2 cup baking soda Grab a slotted bamboo spoon. • Preheat your oven to 400 and line a baking sheet with parchment paper. • Drop the pretzel buns into the boiling water using a slotted spoon, place as many into the boiling water as you can fit into your stock pot without crowding. • Boil each of the buns for 30-40 seconds, starting with the rounded side up and turning halfway through the minute (30 seconds each side). Use your slotted spoon to remove the buns and place them onto the parchment paper lined baking sheet. Slit each bun with a knife- Brush in melted butter then top with Celtic sea salt. • Bake for 15-20 minutes or until golden brown and the buns are still soft on the crust!
